Take a city with 2 or more airport like Milan or London.
Does the flights direct to one of the airports influence the demand of the other airports of the cities too?

Yes but no. There is something called ground network which is basically anything else than flying which passengers will use only in extreme cases, on the route you explained passengers would even rather stop in CDG (with decent connection time) than taking ground network. As there are usually flights from all of Milan´s airports to all of London´s airports the chance of attracting customers from other airports is very small. The fault in this matter is that each airport has it´s own demand and not the city for example I want to avoid LHR at any cost so I prefer flying through LCY or even LGW but both get less demand in AS even if the passenger´s goal is London and want to reach it in the easiest way which is LCY. For example on a recent trip to Stockholm my goal is to reach the city center thereby my best choice is BMA and absolutely not ARN which is quite far away.
