I'm thinking about starting a long haul flight, but what airplane should I use?

Why?
You can select between 787, 330, 767 or even 777 if you can find them cheap. I would not go for 380 or 748.
If longhaul means up to 7.000 km, you can also use A320 neo heavy.
BTW How much money should I have as a safeguard and what do I have to do to make Long Hauls profitable

You need no reserve you just need to have the other operation being profitable and if needed being able to cover the long haul. Personally I currently operate 737s, 747s, 757s, 767s, 777, 787, A319s, a320NEOs, A321s, A330s A340s, A350s and A380s with my various airlines on long haul routes, though most of A380s fly short haul. Of course the 787 and A350 are the best. But I have gotten the other ones for low prices and I am surprisingly pleased with 777s and A380s, but I only recommend them for high demand routes. The A330/A340s and 767s are also generally very good and if found at used prices they can be even better than brand new 787s. Even though I operate quite a lot of aircraft types with various airlines if ever forced to chose two I would with no doubt chose A320s and 787s. With those two types there is no need for any other. I have written this paragraph probably ten times. How hard is it to search?
In your case as you are new to the game and dont have as much experience and that this is your first ever functioning airline I would recommend the high mtow A320NEO and the 737-700ER for even longer routes. Those 737ERs can get you to all of Asia and even the US east coast. With my strong Turkish partner I have to say that flights between US and Turkey are doing great, I currently have two 777-200ERs between LGA and IST with plans to add three more just on that route and two 777-300ERs to MCO.
So basically, Highlander, market is already taken and capacity provided in full between USA and Turkey.
Personally, I think it is wise to start long haul route when your weekly departures is more than 2000. Maybe you can work some magic and start flying long haul.
I recommend B788, not too big and very versatile aircraft.
