I usually charge somewhat above 100% (but I usually have fairly good service and seats). Say 120% or 130%. Then I wait a couple of days and look at the route: if the flights are filling up nicely I keep the prices or even increase them a bit more. If they dont, then I start decreasing.

In terms of onboard service, there are two types of Economy traveller. One will fly with the legacy carriers and is willing to pay the price premium for it, the other will only fly with a low price carrier like Ryanair. For ease of coding, only the first exists within the game because we don’t have ancillary revenues such as bag fees or buy-on-board sales to make up the revenue differences. Therefore the service that you provide is rather important, but not to the point where your economy passengers will pay enough of a premium for cocktails, porcelain china or noise cancelling headphones.
Play with the onboard amenities and catering settings. There’s a tab that shows the passenger rating. For each distance, one green bar is a rough estimate of what the passenger expects to receive on a flight of a given distance. This rating combines with the seat ratings and other image ratings to make up your total rating, which will make a passenger choose your flight instead of a competitor.
