Which 737 Size aircraft are ETOPS rated? For routes like Honolulu to French Polynesian and Guam. Second is there a way to sell aircraft immediately and get the money for them?

ETOPS restrictions is not part in AS. You can choose any 737 variant.

Theoretically yes, if there is a buyer who choose immediate purchase of the aircraft.
Slight correction concerning 2.: Immediate purchase is only available from official AS companies. So the fastest an auction can be over is about one hour.
Automated purchases by AS only happen after two weeks and when the starting price of the auction is 10%.
I know ETOPS restrictions aren’t in the game but I wanted to make it as realistic as possible.
Not sure about a limitation to the HGW only, but I guess all the HGW variants of 737-700, -800 and also -900ER with or without winglets may be certified for ETOPS 180 operations.
I know Uniteds -800 and 900ER are ETOPS certified, Alaska Airlines some of their -700 and -800 as well.
