I know departure times have zero effect, but what about frequency of the route flown (e..g 7 x day vs 20x day), airline age, aircraft type/age, etc. What i would like to know whether frequency makes any difference at all for individual flight demand.
If I run a LCC and have limited onboard service, how much lower must my price be vs competitor in order to attract passengers? I guess just $1 off would not do the trick.
A side question:
in ORS when doing route/fare search, there are two ratings forĀ a route. One of them is above the aircraft type, the second one is below the aircraft type under the line. Which one is for which and what does both of them mean/display ?
All of the factors that affect whether or not passengers choose your flight are factored into the ORS rating.

Departure time would be one of the factors for your flights. Your competitors might have lots of feeders and direct passengers to fill any of their flights. But, you can't simply crush with their departures because most passengers will go for the better one (if not, they will go for better connection). As you said, high demand will contribute to mostly full flights. So, you can try it.
Building up a LCC in AS is not a good idea at all. If you like, you can adjust the ticket price 30% below default price setting and see how it goes. Check out ORS frequently would be helpful for you.
In ORS, the upper bar shows the rating of the dedicated flight. Scroll your mouse to the bar and it will show your rating, eg: 77.
The bottom bar shows the overall rating of your flight or connection. Non-stop flights will usually get 5-bar rating if you operate with reasonable services and prices. One-stop or even two-stop flights will lower down this rating as transfer required. Eg: operate domestic short haul flight with Boeing 737 (appropriate services & prices) will give you 99 in economy class.
