Today UAE and Isreal formally established foreign relationship. Therefore, UAE - Isreal routes should be enabled for upcoming servers, like Egypt and Jordan.
Maybe worth waiting a little. Unless you have a source that says differently, the bilateral air agreement has not been agreed to and will be part of upcoming negotiations (which lets remember could be cancelled…)

Interestingly last year a few people on flightradar24 noticed that some carriers eg PAL and someone else, had overflown Saudi airspace to land at Tel Aviv. There has been talk of unofficial links between Mossad and Saudi Intelligence sharing intelligence about Iran. My enemies enemy etc. However direct flights I would think are a long way off as well as El Al being allowed to overfly Saudi.
Air India has been allowed to overfly Saudi airspace on their way to TLV for a while
That said, as there isn’t yet a bilateral agreement in place regarding routes between Israel and UAE, it should be opened in AirlineSim either
EL AL flight 971 was due to depart today to Abu Dhabi. B737-900 is being used. This is a demonstration flight with only VIPs on board including Trumps son-in-law.
