Apart from moving passengers cheaper than the default option, are there any advantages to having a terminal?
Will it make a meaningful increase to the numbers of passengers who want to fly with me?
Depending on how many stars the terminal is built and if it offers jetways, you may increase the rating of the departing passenger.
Perhaps this has been discussed before, but has there been thought about offering flights departing from the same (any but default) terminal e.g. a decreased transfer time of 15 minutes? That way terminals could be even more interesting offering more connection possibilities.
There are new features planned for terminals (for the future) and terminals will play even ore important role than they do now, that's why terminal lots are getting abolished in AS 6.2 and there will be unlimited terminal lots.

I wouldn't bothering building a terminal unless your airline group can handle there at least 2,000 pax per week.
Also, terminals will NOT give you any ORS advantage in Economy class on short and medium haul routes (they really make a difference only for business /economy first class passengers, and for economy pax only on long haul routes such as FRA-ORD, etc.)
What they do, however, is they affect your "terminal" rating for flight, which in turn affects your overall airline image, which in turn affects your ORS rating for future flights.
and image is important ;-)
Inventory management for the route pair and flight number management for a particular flight look very very similar, you have to make sure you are in the Inventory... because these options do appear only in Inventory, but not under an individual flight number management.

is there any advantage to assign my own Terminal to the Arrival flight since the inventory lets me assign that (default arrival terminal is T1 and I can assign my own arrival terminal T2).

No benefit assigning it to arrival at the moment. It has no effect on flights. Also arrivals are not counted in terminal capacity, even if private arrivals terminal is assigned.
Now there is just a click saving advantage, if you fly from A to B and both have private terminals, when you schedule A to B and assign private departure terminal to A and private arrival terminal to B, and click to apply setting for return flight or airport pair as well, the return B to A will have The private departure terminal assigned with this. In the old version you had to go to the return route to assign your private terminal. So at the moment, this is one advantage, a click saving advantage.

Just one more (maybe a bit stupid) question regarding terminals: Where can I see the amount of "units" I need when opening a terminal?

You can see your weekly flight capacity in the station tab on the respective airport page or you can use your station overview list.
Note that it is not always you have all your flights full (actually it is very rare and quite stupid) and building a larger terminal than you need is just stupid, but whit this new feature you are in deep trouble if your terminal is to small even whit just one unit.
