You don't hire pilots, you assign them. Excess pilots are kept in a holding room somewhere, waiting to be useful again. If there aren't enough excess pilots to suit your needs, a shadowy agency takes a black van out onto the streets of your hub city and abducts people, forcing them to become pilots under heavy coercion, and charging you eight weeks worth of salary for training them.

To be more "practical", by default, pilots are automatically assigned whenever a new aircraft enters your fleet, so you don't need to worry about that. Unlike automatic cabin fitting, I'd say this is a reasonable default.
If you disabled this in the settings, the easy way to handle this is to go to the plane you want to assign pilots to, and click on the big 'ol green button "Assign pilots", on the top right of the page. Pilots will be assigned as is:
– First, if you already have unassigned pilots in your company, they will be assigned to the plane (which costs you nothing),
– If you don't (the usual case), pilots type-rated for your aircraft will be hired on the market (which also costs you nothing),
– Finally, if pilot abduction is necessary because there are no pilots available, they will be trained (costing you 8-week worth of the average salary in your country).
Finer management of pilots is possible through the Management > Crew management page, that will for example allow you to re-train pilots you have for another aircraft type, which is cheaper than the last option.
I gladly volunteer to be a pilot if your airline pays the course. I would prefer the Airbus
