I have a boeing 737-800BGW and its scheduled to have 28 flights per week, the first 5-7 flisghts arre always fully booked when I first lease them. Then that amount of passengers booking for the flight starts to drop from 100% to 70% then to 60%…did I do something wrong or am I missing something that I didn’t do?

Of course it can change ... the game would be boring if not or? This is called competition. Other airlines offer flights wíth better connections, better service or ... something else. however, check the ORS to see how your flights are rated.
I think he talks about the drop that sometimes happens in the first few flights after you open a new route. I observed the same effect even on uncontested routes. Seems like there is some kind of backlog that accumulated while there was no connection.
